BEEF

The beef you buy at the grocery store is a world away from the game animals that our ancestors ate. Today, domestic beef cattle are fed grains to fatten them up quickly. Their natural diet consists of grasses that grow in the areas where they live. The result of feeding cattle an unnatural diet is unbalanced Omega 6 to Omega 3 ratios in their meat. The medical community is emphasizing the importance of Omega 3s in the diet to protect against heart disease and a host of other health problems. For this reason, we should all try to obtain grass-fed (GF) beef. Resources are listed on the Links page.

BEEF STEW

Ingredients:
  • 1 - 2 lbs. GF stewing beef; cut into bite size pieces
  • 2 carrots; cut into 1 inch pieces
  • 2 parsnips; cut into 1 inch pieces
  • 1 medium onion; quartered
  • 2 ribs celery; cut into 1 inch pieces
  • 1 bay leaf
  • 1 clove of garlic; crushed
  • 1 T dried parsley
  • homemade beef broth (optional)


Preparation: Place the cut up vegetables, bay leaf and garlic in the bottom of a 5 quart stock pot. Put the cut up beef on top and sprinkle parsley over all. Add enough water or beef broth to cover the ingredients. Cover and simmer for 3 hours. When done, thicken the liquid with cornstarch if desired. This recipe can be made in a crock pot; put ingredients in as described and set it on low for 4 - 6 hours.
